Dinosaur Beef Ribs

Ordered these from wild fork a few weeks back and finally got the chance to smoke them today.
Used Killer Hogs AP seasoning and light coat of killer hogs the bbq rub.
Took about 7hrs total
Bull at 250
Wrapped in butcher paper after i reached the coloring i wanted and waited it out until i hit 203
They were absolutely amazing.
Cutting through them was like warm butter. As juicy and tasteful as it can get.

I have a rack from Wild Fork defrosting in the fridge right now. Planning on doing them Saturday. I did a rack several weeks ago.. So good and really easy too. I just hit them liberally with Heffer Dust the night before then toss them on the 700 at 250 degrees first thing in the morning. When they are done, again about seven hours like yours, I let them rest for a couple hours in a warm but off oven until serving. Man, now I wish it was Saturday!
 
Did you thaw them or go right from frozen. As you know wild fork comes flash frozen and many of their meats they recommend just going from freezer to grill. Most of us tend not to do that but just curious
And in the area of you ain’t gonna believe this crap. They just knocked down a bank a 1/2 mile from my house and they are putting up a wild fork. I couldn’t believe it as virtually all of their locations are in Florida and I’m suburban Philly

Well it’s Saturday and the beef Dino ribs went on the 700 at about 8:00 AM. I’ll post again when done.

I left in the fridge for about 1.5 days and they were perfectly thawed and ready to be seasoned
