Jumped off the deep end and did a small chuck roast as practice to do a high dollar brisket. Came out pretty good for a guy that just got a pellet grill. Did a couple marrow bones also. Sorry but I just had to taste the bones!

Bone marrow is just a super treat on toast or spread on a chuck like this. Keep it simple. I use a sprinkle of Greek seasoning or just salt and pepper. I don't bother with a salt water soak. I did these at 395(peeking every so often) till I could see them coming off the bone a bit and some bubble. It was about 20 min total. Just got this grill in Dec. and have never done marrow bones before....so it must be easy!

Chuck roast is great and not enough to waste.
