I was handed down a RT-340 and the inside is a mess. Looks like grease spilled over the drip tray and tons of it collected on the bottom. I know this will take some old fashioned elbow grease to clean, but is it ok to use a metal bristle brush on the interior? There are dark stains all over the walls as well. Do I need to get this thing spotless or just get rid of the large grease build up?
 
I would vacuum and wipe down with paper towels, no chemicals.
Others may have better ideas.
 
if the grease is gooey or moist, I would try to remove it with a plastic drywall putty knife. If it's dry and crusty, wadding up aluminum foil into a ball & scrubbing it works. I used both methods on my old charcoal & gas grills with good results. I don't think you want the interior too clean because seasoning is precious.
