Now I’m not passing negative judgement on competition recipes, but keep In mind that competition cookers, and competition SCA judges like myself, are looking for One. Perfect. Bite. Not two, or three, or more. Your at-home guests are probably hoping to enjoy the entire meal, so usually if you see a legit ‘competition’ recipe, you will need to dial it back for a successful home BBQ. The first bite may be perfect, but the next one puts it over the top.
