Wanting to be able to cold smoke salmon on my 590. Is my best bet to run the grill on fan only with a smoke tube on the grill next to the fish? I would think it's necessary to have the fan on for air flow purposes, right? Just looking for any tips/tricks. Thanks.
 
That should work I would think. Just as long as the smoke moves and doesn't just hang in there too long to get stale
 
That’s the way I smoke cheese and it works great.
 
This is how I smoke my fish. I have no idea how you all got a salmon to fit?
