Trying chuck roast on my new 700. Seasoned over night in fridge, going to use extreme smoke for a few hours then kick up to 225. when they hit stall, around 160 will wrap in butchers paper and kick up to 250 or 275 until they reach around 205, will put in cooler and let rest. appreciate any suggestions.
 
Sounds like a good plan. I’ve done a few chuck roasts and like them a lot. A long rest in the cooler really helps the texture. Good luck!
 
Tell us how delicious it was! I buy them periodically and turn them in to burnt ends... someday I need to try your method.
