My first cook on my 700. going to try cooking at 275 then after a hour or so kick up to 425. Wondering if when I cook if you wait for temp before putting on chicken. was wondering if putting on food as 700 gets to cooking temp will provide more smoke rather than waiting to get to 275

IMO, you will not notice the difference if you put them on the grill before it warms up.

I do legs and thighs at 225F until the internal is 155F or so, then I toss them under the broiler (or a very hot grill) to crisp up the skins.

Ditto, let it get to temp before putting on meat. 225 to start will give it more smoke, at least that’s what been working for me. There’s a lot of trial and error, dont be afraid to experiment.

Personally I like the 0 to 400°F and 165°F internal temp. Just enough smoke and still get crisp skin. Everything else I tried had chewy skin if I cooked to long at low temperature.
Fyi. Wings 3.78lb at Sams Club. Legs 0.78$ lb. I've been getting just the legs!
