Chicken and Dumplings

Pulled some of my smoked chicken out of the freezer for a chicken and dumplings dinner. The smoked chicken is a really good addition!

That sounds good. Haven't had a homemade pot pie in a long time.

My boys love chicken pot pies. I got in the habit of taking the "single dad" shortcut of frozen peas and carrots as the veg, and frozen pie crust back when I was a single dad, but they still clamor for it. I need to try chicken and dumplings with them.
The picture is a pot pie I made with my rugby obsessed youngest son a couple years ago. He was thrilled, and so was the rest of the family. He's convinced it's the world's first rugby themed Chicken Pot Pie.
