@Greg Jones, I’m getting ready to do a brisket this weekend and I just re-read your brisket tutorial for about the fourth time. Every time I read it, I pick up something new. This time, it was trimming the brisket corner to match the grain. I had seen in earlier reads, but it didn’t click until now. Such a simple thing to do, and so helpful when you get ready to slice.
This is a very well-written, clear and concise tutorial that belongs at the top of the reading list for anyone who thinks they want to smoke a brisket. Thanks, Greg, for putting this together.
