Anyone have any good recommendations for a slicing brisket knife? My standard chef knives don’t seem to work well for me.

I recently bought this DMT diamond lap. It's 10" x 4", which provides plenty of room for big knives and it stays put with the base with rubber feet. Best setup I've had.

I have the regular non-granton edge 12" Victorinox. I think it does a great job. I've used the granton edge version too and can't really tell a difference on brisket.

Does a wonderful job on slicing pit beef, turkey breast, prime rib, whatever...

We have both, a Victorinox 12" straight carving knife with granton groove as well as a Victorinox 12" serrated edge carving knife.

If the meat has a hard bark, the serrated knife is noticeably better able to break through the bark and slice.
