I picked up Berkshire Boneless Pork Loin (1.3 lbs) from Wild Forks for $11.00.
It was really tasty and was enough to serve four people.
Ingredients:
1 1.3 lb. Berkshire Boneless Pork Loin
Mustard
Rub
Pre-heat smoker to 225 degrees
Directions:
Pat dry the pork and then cut the fat cap in crisscross.
Apply mustard and then rub to all sides. Place in a covered pan and then place in the refrigerator overnight.
Place in the smoker and when the pork reaches 145 degrees, (torch the fat cap and the sides) removed from the smoker. Place it in a pan and cover with foil, allow it to rest for 15 minutes.
Notes: The pork took 1 hour and 40 minutes and it was juicy and excellent tasting.
