Bull Beef Short Rib - Not short!

Long story short, bought a side of beef and I have 1 package labeled Beef Short Rib. This thing measures 18" long by 6" wide for not quite half the length then it starts to taper. Weight is 7.5 lbs - how would you go about cooking this and what would be a reasonable guesstimate for time on the cook?

Is this the size of the package, or of the unwrapped “short rib?” If the package, there may be several sections inside. A photo might help in getting a response on cook time.
