I bought the RT-700 and so far I absolutely love it. I'm attempting (in progress) to smoke a 4.5 lb flat brisket. I set temp to 200 and at 11:30 this AM I placed my brisket on the smoker. 4 hours later, internal temp was around 140. It's now 7:30 and my internal temp is around 180. I did turn up the temp at 5:30 to 250 and also wrapped it in Peach Butcher paper to help out the cooking. If anyone has a suggestion for improving this process, and also at what internal temp do you pull the brisket to rest, I'd greatly appreciate it. Thank you!
