I have always done my briskets and butts on low overnight and the temp is always about 140 in the morning. I then crank up the temp to 250 and go from there and have never had a problem.

As with anything you build or add on when you get done you will think that there was something else you could of done. But when you get done just kick back and enjoy.

I found that just using my Blackstone for searing was the best option for me. I really did not want to mod. my 590 because it seems like it cause more problems than it was worth. might try the Camp Chef Sidekick and have everything tigether.
My son in law gave me a meter+ and i have used it several times now. I find it very easy to use and the app is very simple to use and understand. I like that the 1 prob gives you meat and ambient temp.

Talked to a RT person yesterday and they told me that Temp. Calibration does not work and was not supposed to be on there. I am not a big IT person so a lot of it was Greek to me.
