They look cool. I think they're supposed to keep the rain out. I can see that. Do you need them? I don't know? I don't have them on my 340 and don't have problems because I don't cook in the rain, and keep my grill covered when not in use. I think it's one of those cool calls.
Yes to a good size for two people. I've had mine for year now. I've done chicken, BB ribs, fish, ribeye steaks, burgers, beef ribs, and others I can't remember. The 340 has done everything well. A very good choice.
Sorry. Never cooked a beef neck roast. But did plenty of deer neck roast. Never smoked or grilled them. Cooked the down in red gravy for long hours. A south Louisiana style, until the meat came off the bone.
