I own a 700 bull. I bought the bullseye to make quick work of searing. I also own the big green egg and it hasn't been used in a long time since I got the rectec. The bullseye is still new for me but I think it will be my go to grill.

i fold up a paper towel like mentioned above. it usually traps the moisture before getting to the sealing area. fold it and lay it across the top of your food dont get it in the sealing area tho.

nope water will eventually ruin the cable. Just wipe the probe off not the cable.

Smoke house pellets were fine and I would use them again. I'm still experimenting with others right now.

I used half the #40 bag so far. They are working fine. Don't have enough experience to be able to compare to anything else yet.

why do you need to circulate the smoke anyway? It will flow out the stack with natural circulation.
