They just were not getting tender and I herd they needed to hit about 200 degrees. They ended up over smoked by the time they were tender. I think it was just too low and slow.
So I tried the 3-2-1 but ended up with a 3-2-3 .it just would not come up to the 190 plus mark.
But I ended up with smoked to the bone ribs.
They weren’t there terrible but definitely too Smokey.
Well my second RT700 came today and it’s in perfect condition thank God .
Now I get to start having fun putting it together, burning it in and planning my cooks.

So do you guys preheat at high temp to burn off the grates before you’re doing a low and slow and then let it come back down to temperature before you put your meat in?
