    Freezer: How long is too long?

    About 6 months ago my wife cleaned the chest freezer and found a vac pac pork butt. It was from 2015 or 2016. I was going to cook something anyway so we said what the heck. We did usual rub and didn't wrap. Probably one of the best butts we've ever done. If there's no freezer burn use it!

    I have a sear grate on my gas grill and it works great as long as you are doing larger single items. Not so good for anything like pancakes, rice or any food with chopped veg or onion and garlic. Whole reason I'm looking at a bullseye 🎯. If I get another grill I will really be in trouble!

    I don't know how hot the fire pit gets but I can get my old 680 to nearly 475-500. That's how I initially clean everything before disassembly for a thorough cleaning. I have seen glowing red in the bottom!

    Well this doesn't have much to do with the conversation but the best ribs and baked beans combo I ever made was on a electric vertical smoker. Ribs above the beans and let the drippings down on the beans. Yum Yum. I say experiment every day!

    Yeah, but.....

    Imperfect cooks just give me a reason to do another! In the 10 years we have been smoking there have been just a handful of times when something was just bad, over cooked or inedible.
