I have done 4 rib roasts over the past week on my 340.
250F to internal temp of 140F.
I smoked a 10pounder and three 5 pounders. Two 5 pounders at the same time. They all surprisingly came out to around 3 to 4 hours to reach internal 140F and then they sat for 30 minutes under a foil tent.
The recteq website says the 700s are on backorder so I would call the store and see if they have one you can buy in person. The only deal I know of is the pellet bundle but that's for a purchase of the 340 or the bullseye.
I'm also debating dropping my 340 and picking up the bullseye. I been smoking so much with great results on the 340 but I can't do a typical steak hot and fast with it (340).
I believe they are the same. It was labeled as standing rib roast but I knew when I saw it they were "ribeye roast". Fortunately I wasn't limited to one but I wasn't too greedy either.
I just picked some standing rib roast to tide me over to the new year. 5.49lb normally 8.99lb. I think there are sales but gotta find them and catch them (y)
The rains on Friday night put a kink in my smoke activities too. I had to shut my 590 and 340 down after they got nice and heated. Ended up waking early the next morning and starting everything. At least Saturday was great weather for it (y) :)
I store my 340 and 590 in the same locked shed for security reasons. Moving my 590 is not an issue right now but I am going to grab the comp cart when they become available again. The 340 manual/instructions say not to move it with the legs fully extended. I took note of that and still moved...
I would still order the 590 ;)(y) my coworker has both the bullseye and the 590 and even he says that they both have their uses.

I own the 340 and the 590. For your family size I honestly think the 590 is your better option.
The 340 is definitely small. The 590 fits the large griddle and still has space when just 3 grill grates are inserted and not other accessories.

I could take measurements between my 590 and 340 lcd areas and see if they are similar. I can probably model out a "shade" or angled cover to 3d print and act as a cover. Unless someone made a 3d model already.
