Wanting to be able to cold smoke salmon on my 590. Is my best bet to run the grill on fan only with a smoke tube on the grill next to the fish? I would think it's necessary to have the fan on for air flow purposes, right? Just looking for any tips/tricks. Thanks.
Started a 9lb pork butt last night at 7pm cst. Got to 160 and wrapped around mindnight. Got to 200 internal at 415am which was way faster than I had anticipated. Pulled it off and it’s in towels in a cooler.

Just got my 590 in and setup today. Did my burn in and had it get to 400 then go down to 350 and backup to 400 in about a total of an 1hr and 15 mins....is that normal?
