    Cold Smoking

    Wanting to be able to cold smoke salmon on my 590. Is my best bet to run the grill on fan only with a smoke tube on the grill next to the fish? I would think it's necessary to have the fan on for air flow purposes, right? Just looking for any tips/tricks. Thanks.

    Help Again

    Started a 9lb pork butt last night at 7pm cst. Got to 160 and wrapped around mindnight. Got to 200 internal at 415am which was way faster than I had anticipated. Pulled it off and it’s in towels in a cooler. Planning on eating around 11am. Should I just keep it in the cooler or maybe put back...

    Update: wrapped at 155 about 45 minutes ago and bumped heat from 225 to 250. Internal temp hasn’t moved off 155...am I don’t something wrong?

    Hi All, Just got my 590 in and setup today. Did my burn in and had it get to 400 then go down to 350 and backup to 400 in about a total of an 1hr and 15 mins....is that normal?
