Since I have to work on Presidents Day, Momma cooked the Beefback Ribs today
She put them on at 2:00 this afternoon, with the Bull set at 180 (LO) for 3 hours
Slathered them with Smoked Tallow and cranked the Bull up to 250 until the Ribs reached 180 internal
Very moist and tender:
Went to Costco yesterday and picked-up a couple packs of Babybacks and a rack of Beefbacks
Today was the Babybacks
Cooked them as usual, but added Smoked Lard when I wrapped this go-round:

Lately, I've found that my Smoke Tube only burns about 1/4 - 1/3 of it's Pellets before it burns-out
Thinking the Pellets could be "damp", I tried Microwaving the Pellets beforehand, heating them in a low temp Oven, even thought about putting a bunch in my Dehydrator

Started a Test on how our Bull handles a 15 hour Brisket Cook, using Knotty Wood (Almond) Pellets
Here's our full Hopper last night:
And again this afternoon after an 8 hour on "LO" and 7 hours at 270:
Looks to be about 10+/- lbs of Pellets were used

Started the Bull at 13:00 (set on "LO") today to smoke some "Country Style" Ribs for tonight
Put the Meat on at 13:30 and the Grill Temp was 180 .... so far so good
Went out at 15:30 and the Bull was sitting at 95 .... pretty much the Ambient Temp here o_O
Pulled the Grates, the Drip Pan and...
Not sure how much truth there is to it, but my Wife is a Member of the RecTeq "Facebook Group", but She saw that RecTeq is looking to build a "Store" in the Lehi, UT area
Now I know what I may be doing after I retire from driving, and get off the Road
My Sister-in-Law and Hubby are really into Coffee
So as a Gift, we smoked some Beans for them
We ordered 2.5 lbs of Kona Hawaiian 100% Authentic Prime Raw Green Coffee Beans
Placed them on our Cooking Mates and smoked them in the Bull
350 for 45 mins to a hour +/-
Leave them in until they crack...
We've had our Bull for right at a year now
I use many Alder and add Smoke and Flavor using "Flavored" Pellets in a Smoke Tube
Our very first "Hopper Load" was a 50/50 mix of Oak and Alder, which is what we always used in our Offset
We found that THAT didn't translate to a Pellet Smoker all that...

Picked-up a Brisket, 4 Whole Chickens, 2-four Packs of Pork Tenders and a four pack of Ribeyes
Threw the Ribeyes on the Sear Kit last night, and seasoned the Pork Tenders for an early AM start this morning
Two Rib Eyes were for dinner last night...
SO, We're smoking Babybacks today, in lieu of starting the planed Brisket last night
Seasoned six racks yesterday, with Grinders of Salt, Peper and Dehydrated Garlic
Wrapped in Foil and in the Frig until noon today
On the Grill (with the Smoke Tube) for 3 hours were we'll start the "Spritzing"...

Went out of my way to stop at Costco last night ( on a Friday night .... WHAT, am I CRAZY ?!? ) to grab a Brisket for Sunday "Sorry, we're out of Brisket, they'll be on the Truck tonight"
