If I am cooking at a high temp I always lower the temp back to 200 deg or 225 before I shut it down. In my mind this lets the pellets in the firepot burn down. This gives less chance of ignighting the new batch of pellets for the next cook. This has been working great for me.
I did my first 9 lb pork shoulder (and first all night cook) on the Stampede RT-590 yesterday. I put it on at 10:00 PM at 225 deg using hickory pellets, and it took a total of 12 hours. When it reached 165 deg I wrapped it in foil and put it back on until it reached 200 deg about 4 more hours...

Mike, I smoked cheese using the smoke tube only and it came out great. Don't even turn the grill on. Leave it off and smoke the cheese four hours on a cool or cold day. I use apple wood pellets. After four hours of smoking there will be some moisture that beads up on the cheese from condinsation...
Take a look at this "Test Mode" video. It shows you how to test every component of your Rec Tec Grill one at a time. I did followed it to clear out the pellets from my auger.
The offset adjustment is used if your grill's actual temp is different that the reading on your display. This video will make it easier to understand, and will show you how to make adjustments.
My bacon is done and ready to try. I'm letting it cool down and going to put it in the fridge over night before I give it a taste test in the morning. If it tasts as good as it looks, I will be a very happy camper.
Is rec teq still selling the all weather vents for the RT-590? I know that they were out of stock, but now I can't even find them listed on the recteqgrills.com web site. Just wondering if they have been discontinued. Also if anyone has them on their grill, are they worth getting?
When I clean my RT-590 and vacuum out the fire pot, do I need to add some pellets by hand to the vacuumed out fire pot. The auger is fully primed with pellets and I'm not sure if I should leave the fire pot empty after cleaning. I don't want it to over fill on start up and cause a problem.
