700 Cover - Epic Fail, just venting

I know there are threads covering this and I know there are ways to do it and instructional videos and all that but I just need to vent for a minute here. Love the bull - hate, hate, HATE the cover. It is an epic engineering / design fail in my opinion. There are instructional videos for...

Confusing Cooking Experience - opinions wanted

@tempecarlton Now THAT's what I talkin about!! That looks delicious. The more I think about it and the more replies I get, the more convinced I get that it is my temp.

@Oldboy Checked that and verified correctly placed. I vac'd out the pellet dust this weekend and no grease in the bottom.

    The great ReqTec cover question

As others have said, have to take your time to avoid tearing it. That said, it IS a wiff on RecTeq in my opinion. You really should not need to need to be so careful or need YouTube instructions for covering / removing cover from a grill. Just put another inch or so of fabric into it and...

Could also be probe placement. I also should say that the pit is pretty much stabilized when they match. When it is coming up to temp there is bigger drift. There is also an offset setting you can set if the drift is relatively consistent.

@Bif Hunkly I run a Thermoworks Smoke and with the occasional drift a few degrees here and there it is very close to the RecTeq probes. I will have to take a look at Aaron's information, thanks for the tip.

Confusing Cooking Experience - opinions wanted

Wow - thanks for the time to reply guys, I really appreciate it. @sdynak Great question. When I say terrible and not the doneness I like I mean that there is a lot more fat in them than I am used to despite my normal trimming regimen and they are tough and stringy. I am used to them falling...

Confusing Cooking Experience - opinions wanted

By way of background, I have a decent amount of experience smoking on charcoal and gas burners (more on charcoal) and have cooked a LOT of shoulders and ribs with pretty much universally positive results. The bull is my first pellet smoker and I am getting some results which don't make sense to...

    Smoked 8lb pork butt time?

Yeah - sorry for my part here also. I was just asking. I (incorrectly) interpreted the sundown comment to mean light was an issue.

    Smoked 8lb pork butt time?

Curious (not trying to be a jerk) - how are you offgrid but still running a power-dependent pellet smoker but not able to power lights?

Do people grill in the rain?

Raining here right now and about to throw on a tenderloin. That said, I do keep it covered when not in use and put up a patio umbrella over the controller side because I have found water and electronics don't always play well together.

Got our "Rec Tec" Toolbox yesterday

Toolbox looks sweet. Also good to see another like-minded individual who sees the value in mounting the horns "upside down". I did mine that way to reduce the likelihood that one slips out of my hands if my hands were covered with anything slippery.

    Whole turkey cook time

Same I did a ~11# one a two weeks ago with outside temp about 50 degrees and it took about 2.5 hours. Spatchcock and dry brined for 26 hours before. Pulled at 160.

    Got Pellets...?

CookinPellets 40PM Perfect Mix here. Been great. Order them 2 bags at a time - 1 in the hopper, 1 in a rolling dog food container and 1 in "reserve". Place new order when I get near the bottom of my dog food container stash.

    Matador as a paella burner

WOW - that is a sweet looking paella, way better than any attempt that I have made. I love the dish and am really trying to develop skill at making it so the recipe would be super helpful. I have been doing it on an induction cooktop by straddling my paella pan across two "burners" and...

Loading pellet hopper from the front?

As others have pointed out, relatively easy from the front but way easier from the side. However, it holds 40# and has wheels so is it a possibility for you to roll it out enough to where you have side access for the times you need to load? I load mine with a scoop also so am never really...

    Matador as a paella burner

Looking at the Matador for all the things that it is good at but wondering if anyone has tried using it as a heat source for a paella pan? Paella really needs a fairly even heat source across the entire bottom of the pan. This is the piece of kit that they sell for doing a 22" pan which is...
