I change the heat diffuser, I lowered the feed rate, use lumberjack pellet.
First few cooks temperature went up too high, with some of the changes I did to it maintains temperature pretty much on line.
I ran into the same problem when I first went from stick to pellet... I feel you brother!!!
After many testing, pellet swap, talking to friends with pellet smoker and just reading through comments here I ended up getting "BIG D" heat diffuser.
I use lumberjack pellet for my cooks, whatever...
Overnight smoked this brisket for about 15 hrs, wrapped and finished cooking for 2 more hrs.
Very nice bark, pull and bend! Solid consistency!!
Cook at 225 all the way through, went up to 250 last two hrs after wrapped.
Anyone here smoked a brisket without wrapping? Never done it in a pellet smoker...
Also, how long will the BFG go with the hopper full to the max (how many hours smoking?)
So this is what the difference from stock diffuser to "heavy d" looks like, too short for a BFG...
What ended up doing is placing the stock RECTEQ diffuser over "heavy d" to control temp. The amount of smoke was way better though, the temp variance not so good...
