I had a prime cross rib roast that I had in my freezer and it needed to be cooked.
Came up with this while my sister in law was visiting. It turned out so tender and flavorful. SIL was amazed that it was a chuck roast.

Lately I've been using Bear Mountain. I like them but have had some issues that I can correct now that I know. The Gourmet pellet will cook a bit fast, so don't use extreme smoke (over burn into the auger). The bold has a strong smoke, I like it. Using the Apple this morning for a breakfast fatty.
