My brisket cooks seem to take longer than I anticipate usually. I would start it earlier than you think it would take. Brisket can rest in cooler for several hours with some kitchen towels and stay hot. Just keep cooler out of sun so you don't steam it. Definitely inject if it's just the flat...
I've used Butchers prime and Kosmos for brisket, both are very good. They're pretty rich so go easy. Might even want to use less than it says and mix with broth.
So the shelf did good with the heat from the grill but I had it open in direct sunlight, with 102 degree day, and on parts where the picture is it began to bubble up. It doesn't look as neat as it did but it still works for me. I would look into a different product, i know there are stronger...
