The probes. Grill reads fine but I'll have instances like today where they start to sky rocket randomly in temps way higher than what I know they are. After unplugging and plugging back in to the controller they usually reset.
Just finished a 14 hr cook on the 590 for an 8lb brisket. Low and slow at 225. Wrapped at 165 and pulled it at 203. A little more cooked than I like as it wasn't as tender ALL throughout like I like to have it. First brisket I've done so atleast it was tasty. Going to try fatcap up next weekend...
Fresh not frozen. I use a little bit of evoo and coarse kosher salt. Start roasting and then cover so it steams in side. Once to your liking crisp on all sides and make them have that crunch! So good.

Second wrapped an hr ago. Finally broke the stall. Took longer than I thought and got somewhat worries the probes were acting up as it had a 10 degree drop of temp when I pull to wrap.

So the bad boy came in last night. Put it together last night and seasoning it now for this weekend. Ordered a full prime packer brisket and 2 cuts of prime Picanha. Then picked up some choice beef ribs bc prime wasn't available.
To prepare I grilled some picanha on the bull tonight ??
