I would definitely wrap in pink butcher paper to keep moist since it’s just the flat. Put in cooler wrapped in large beach towel for an hour after cook. Don’t go to hot. Low and slow with a good peppery rub. No use injecting since it’s so thin. Enjoy.

I didn’t upgrade to the 700 from my 680 because it works so well so no way I’m upgrading to the 1250. Not worth spending the money just to get the latest and greatest. It would be like upgrading your iphone every time there‘s a new upgrade. Not worth it. Put the money in meat and smoke it. Lol
If needed, I cut with miter saw. Sometimes the log size I buy are too long or wide. I also get 2x2 precut wood off Amazon. They work really well but pricier then logs.
