    Cookin' Pellets news

Maybe it's just me but I find less powder and dust/smashed pellets in 20lb bags vs 40 lbs. I am a fan of cooking pellets hickory, for sure.

    Stampede Heat shied warping

Mine warped on my 340 about after 8 months and they sent me a replacement. Few months after that, that one warped. Been cooking with it ever since. It's just deflecting the direct heat, so no big deal. Mine works fine.

    Stampede Turkey Techniques

I have a 13.75lb that will be getting spatchocked Tuesday evening with SPOG rub. Come Thursday, I'll mix up some mayo, orange zest, and more SPOG and rub it generously making sure to get underneath the skin and cook in the oven. I would like to smoke it, but I plan on making soup with the...

Stainless Steel 304 vs 430 Best Explanation

@okie very informative, thanks for sharing.

    What could have caused this?

Sounds like they were under cooked. I have had some BB's that had more meat on them than usual and took additional time in the pit. I never temp ribs, just because of the minimal bone to meat space with them. I go with meat shrinkage on the bones and the bend test to determine if they are...

Whole Beef Tenderloin - how far in advance can I prep the meat (trimming, etc)?

I always try to do all my prep and seasoning at least the night before. Similar to a dry brine, but with what ever seasoning I will be using in addition to the salt. I will place the meat on a wire rack on a cooking sheet in the fridge. Keeping the meat off the surface of the sheet allows for...

Bull Please recommend a rub for chicken wings

I'm a big fan of their Dirty Bird and garlic parmesan rubs. Great flavor without going overboard with the sodium.

    Boneless skinless chicken breast

Well, actually nothing fancy. I usually will just use Stubbs original. It seems to have less added sugar than most and has a good flavor.

    Boneless skinless chicken breast

I just made chicken breasts last night that were fantastic. First, I always pound out breasts to be a more uniform thickness. Light avocado oil rub and KOSMOS dirty bird rub for a 2 hr brine. Smoker on at 225 and on the rack they went. At about 45 minutes in they were 145 IT. I mopped them...

    Trailblazer App change

Yeah, first time in using mine in about a week and definitely got upgraded. Nicer interface, though it still seems to lag in updating the display. Still have to back out of it then go back in for refreshing the display. Not sure if that's a design thing, or my not so great internet service....

Pulled Pork - To Wrap or Not?

I either wrap with b-paper around the stall, or in a tin lightly covered to collect the juices. I don't see the need in spritzing, unless I'm using something that's sugar based. As for bark, I really don't see much difference in it going naked all the way then wrapping for a rest vs wrapping...

What is your go to rub brand for Pork? For Beef?

I usually go SPOG and or make my own rubs. I will also use some of KOSMO brands for something different.

Best Sous Vide to get started with?

I really like my Inkbird. For less than $100 it works great and has been spot on for temp. The app may not be as fancy as the higher ones, but not a big deal in my book.

    Anyone Use Lawry's Seasoned Salt?

I don't use it a lot, but I prefer the low sodium version. I can add more seasoning for flavor without it being too salty.

Trailblazer Breaking in the 340, smoldering

I've had my 340 for over 2 years now and never had a boom. I just plug it in and turn it on. It does smoke more in the beginning of the warm up, but sure that's just normal in getting the pellets to begin to burn. The only time I get smoldering is after I cook at hotter temps and don't set it...
