Did these ribs last weekend. Pretty much 3-2-1 technique. Started at 180 for about 1.5 hour, then bumped to 250 for 1.5 hours. Wrapped in foil with some brown sugar and sauce for another 2 hours (still at 250), then unwrapped for maybe 20 minutes.

FWIW I was able to achieve lower temps and more consistent temps when I lowered the auger speed from 3.5 to 2.5 or even 2.0. Especially when the outside temps were in the mid/upper 90's. I didn't notice any change in smoke output either. We'll see what happens when cooler temps arrive.

Excellent. Makes sense as these smokes do not have the "smoke" setting on the control like some of the Traegers do.
So, lower temp = more time = more smoke. I will do this on my next cook. Thanks!
