Made some fried eggs, sauteed the pulled pork in some bacon drippings and then sprinkled the whole thing with some Ron’s Screamin’ Pig and drizzled it all with Tiger Sauce.
A good way to start the day.

WOW!!! Yes, I’m shouting with the ALL CAPS; that’s my kind of breakfast! “A fairly good use” is the understatement of the year. My only suggestion would be some Hatch Green Chiles on top of the eggs; I love those things. Well done, @epcotisbest, well done.

Hatch Chilies are definitely a game changer. I was on an assignment in New Mexico years ago and they spoiled me so much that I wait for them to come out each year and stock up. Great flavor and in general not very spicy. I roast them and eat them with a beer and shake my middle finger at the rest of the vegetable world. haha.
 
True confession: I am addicted to Hatch Green Chiles! I have significant quantities on hand at all times and—literally—eat some almost every day. In season, the fresh ones get roasted and consumed. The rest of the year, I rely on commercially prepared Chiles ordered by the case from a supplier in New Mexico.

Frankly, I’ve been unimpressed with the Hatch chilies I’ve bought locally, and I’m a major chili fan, raising around 25 different varieties in my garden each year. Can you share your source?

@Greg Jones, we like the prepared Hatch Green Chiles offered by 505Southwestern.

Our favorite is the Flame-Roasted Green Chile-Medium, but their other products are good too. I have seen it, on occasion, offered at Costco in the large 40-oz jar, but we prefer to order it in the 16-oz jars as it stays fresher once opened. We go through a 16-oz jar in 3-4 days around here and find that once opened it begins to oxidize and lose some flavor after about 5 days.

Good, fresh Hatch Green Chiles to roast yourself are harder to find; you just have to look around. They are usually available July-October.

Thanks for that! I’ve bought these at Costo before, and I agree it begins to lose flavor pretty quickly. I’m the only one here that likes them, so the big jar is too much.

I keep a log on the peppers I grow, and here is my 2022 list. Some of these I grow just for fun as there are peppers on this list that are just not pleasant to eat!

This place is pretty good and authentic (see link below). As a note: My father used to grow quite a variety of peppers and chiles and after several years of doing it, the pollination process made a hybrid mess out of so many that you couldn’t tell which one you were eating.

Thank you for this info. I have never tried 505, but on the website link they have a store locator and found a limited selection locally and will give it a try, then possibly order directly for other choices.

That’s quite a list, @Greg Jones. My heat-level comfort zone is about Habanero level. When the heat overpowers the flavor, it isn’t my cup of tea. The medium-level Hatch Green Chiles is perfect for me. YMMV

Same here. The Serrano is by far my favorite. Excellent flavor, aroma, and not so much heat that it blows your taste buds out.

We can find those at Costco occasionally. I always stock up.

Got a jar this weekend. Good stuff. Already tried it on fajitas, refried beans, in some soup and now on breakfast too.
