Getting ready for the daughters wedding

Sirloin tip roast.
Needed some beef for wrapping my dog's daily pills. He's gotten so skeptical that I have a hard time getting him to take his meds. Chicken and other meats worked for a while, until he found the pills, then no more.

I had some beef brisket in the fridge and tried that. He woofed it down without searching for the pills. So, I cooked a watermelon roast for him. No salt or rub. For an extra attraction and just experimenting, I injected it with unsalted butter. I cooked it covered in the oven, then reverse seared and arrived at medium rare. Really good stuff, even without seasoning. Me and the dog had a session of sampling. ;)

Sorry for delayed after pic - 13 hrs on the bull at 225. No complaints from rehearsal dinner. If I can do this anyone can. And had some Cali folks borrow the little bullseye to cook a 2 tritips that were absolutely wonderful. Little bit of suzi q santa Maria seasoning while she got to 350 then grilled for an hour to a nice medium rare. No pics of them but it is definitely something I will try when I can find them locally here in Atl

Butterflied pork chops.

Brined overnight, rinsed, and seasoned. Smoked at 225 until 125 IT, then cranked the heat and seared them on the grill grates with bbq sauce until 145 IT.

So good- moist and delicious!

Damn, I'm glad I'm not the only sucker with a spoiled dog. I've been cooking a couple of tri-tips a week for dog food for a 17 year old mutt to hide pills, etc. It's an excuse to go cook things in the middle of the week, but now the wife equates tri-tip to dog food. The upside is now I don't get much grief when I order prime cuts for the people. I predict a pretty nice smoked prime rib roast for Christmas!

I've been cooking a couple of tri-tips a week for dog food for a 17 year old mutt to hide pills, etc. It's an excuse to go cook things in the middle of the week, but now the wife equates tri-tip to dog food. The upside is now I don't get much grief when I order prime cuts for the people. I predict a pretty nice smoked prime rib roast for Christmas!

When I die, I wanna come back as your dog. I love tri-tip. On one old bbq forum, I was thought of as a tri-tip nutcase.
 
So I brined a couple of spatchcocked chickens for like 18 hours, but then I got lazy. I made a compound butter and didn't wait for it to soften up before spreading under the skin, figuring it would melt and spread out.

I give you PG-13 chicken...

Still amazing, but pretty sure I'll need to up my game for Thanksgiving with family. One hour at 250 then cranked up to 375 for completion with crispy skin in a little over two hours total cook time.

smoked 41lbs of wild boar jalapeño summer sausage! i smoked it for 2hrs at 147 then 6.5hrs at 180 until it hit 162-165. to get below 180 i set my temp off set to +25 which made the grill read 25 perfect hotter than actually. should have been 135 but it read 147 both times i checked it with 3rpm and mfr 20 i guess 147 is as low as it will go. it was a 35 degree night which helped. interestingly it smoked much less at 147 than at 180 with off set at 0. next time im going to add a smoke tube i think
