Well all this talk about short ribs and I couldn't resist..

I had to use the Kettle on these. Just didn’t want a wood smoke flavor. Kettle averaged around 300 and went about 4 hrs.. there were 2 smaller pieces and 2 larger so I wrapped in foil about 2.5 hrs in as the smaller pieces were about done already. They were pre sliced and I used Hard Core Carnivore.

Wife said this will be our anniversary dinner next month but with real potatoes. We did a cauliflower mash with brown gravy. I have to admit it was pretty damn good. Wife said the best she ever had. Picked them up from a local butcher. They all fell off the bone before we plated them.
 
Breakfast fatty from Meat Church. It was fantastic.
