They were amazing! Nice smoke ring. According to my son, I redeemed myself after my chuck ribs didn't turn out so well. Plenty of beef for three people...I got the meat sweats! 😋

Very nice smoke ring! Looks tender and juicy. Will have to give these a go. My want list is growing LOL. Glad the family enjoyed them. My wife loves beef short ribs so this just might get me a notch if I can get them right. The chuck english style were horrible from WF and I have been shy to try again.

I got mine from BJ's but it was really operator error. 😳

The plate ribs were very tender and juicy. I decided to smoke them to fruition...no wrapping...stalled around 188...spritzed every 30 mins after 3 hrs
 
Buddy at work just got his cow back from the butcher, so I snagged a brisket.
8 lbs after trimming. Trimmings for ground brisket for later.
Started late Saturday night @ 225* with Rec Teq blend.
Wrapped at the stall.
Finished after around 12 hours.
Into a cooler for an early dinner/late lunch.
Wife made potato salad, I made collard greens.
Football, BBQ and home brew on a relaxing Sunday.
Saved some for burnt ends tonight.

tried frying chicken for taco tuesday! 400 degrees worked great with the cast iron pot/pan. made some onions and peppers on the sear kit. pretty good taco tuesday!

I wish I'd paid more attention to what this package of steak said on the lable. Think it was prime sirloin cap steaks from Costco. There were five in the package for like $37. They were great. Like NY strip flavor and fillet texture. Reverse seared from Bull to Bullseye topped with white wine garlic mushroom sauce with a smoked twice baked potato, asparagus, and some shrimps.

Found some beef end ribs on sale, so decided to give them a try. Combined with some red and yellow ABTs and a sweet potato.

Put Traeger coffee rub on the ribs about 5 hours before cooking. Cooked on 340 at 225 for about 4 hours with no wrap. Man these were awesome.
For the ABT cream cheese, cheddar, and Jeff's rub.

These are definitely a new menu item.

I skipped taking photos, but this weekend's cook included an 8.3 lb pork butt for an overnight cook started before bedtime on Saturday night. On Sunday afternoon we added 2 racks of St Louis ribs. The butt was seasoned with Bad Byron's Butt Rub and the ribs with Killer Hogs BBQ Rub.

The pellet hopper still had some LJ Hickory and I topped it off with Kingsford Hickory. Ran the smoke tube with a mix of hickory chips and the pellets. The smell was fantastic when I called it a night.

Everything came out great - plenty of tasty piggy goodness. I'll be vacuum-packing some to freeze for later.
