Labor Day 2021 Weekend Cooks, day by day

Stopped by Costco on the way home Thursday night
Picked-up a Brisket, 4 Whole Chickens, 2-four Packs of Pork Tenders and a four pack of Ribeyes
Threw the Ribeyes on the Sear Kit last night, and seasoned the Pork Tenders for an early AM start this morning
Two Rib Eyes were for dinner last night
These two are for the Freezer:

So this morning, I threw-on the 8 Pork Tenders .... and the Smoke Tube for some added Smoke, using some Flavored Wood Pellets:

This afternoon, we threw-on the 4 Whole Chickens:

They made 3 Meals .... OH, the forth? .... that one was tonight's dinner !

AND ....this afternoon, I trimmed and seasoned the Brisket that'll go on early tomorrow afternoon, for a finish on Monday .... here's the Flat

Got up this morning and decided it was rib day. St. Lou's this time. The St Lou's were $3.39/lb at Costco yesterday as opposed to over $5/lb for babybacks. That made the choice easy.

The hopper has a mix of RecTeq Ult Blnd (oak), LJ Cherry, LJ Apple. The smoke tube has straight cherry. I started them at 225F.

I'll let them go 4 hrs ish or until I like the bark, then wrap 2 racks. My wife prefers more moist vs firm bark. I like both.

I do have that shelf as well. But it rarely gets used with just the two of us.

It's just the two of us too, but we always load up the Bull on (most) every cook
Eat one Meal that night, Vac-u-seal and freeze the others
That way, Catherine can pull something out and "Boil'n Bags" it
Love having Brisket when we feel like it, some Smoked Salmon one night, a Smoked Chicken another and (of course) it's Rib Night Friday
Most every weekend, the Bull is cookin' something, and always multiple Meals
i.e. Four Salmon Fillets makes 8 Meals for the both of us
But not every weekend is quite as busy as what we cooked this weekend

Counting last weekend's Ribs, the Freezer has:
5 Meals (for us both) of Babybacks, 1 Ribeye, 7 Pork Tender Meals and 3 Whole Chickens
Not real sure how many (extra) Meals the Brisket will yield
That all depends on just how much of it we devour tonight .... is there such a thing as a Brisket Coma ? ! ? o_O

Yes, on the brisket coma. I finished off our brisket without freezing any or giving away to the neighbors. I had to be revived with a 8 year old Napa cabernet.

We usually vac and freeze too. Our most used is 1/2 lb packs of pulled pork. But we do tritip, ribs, etc.. The salmon gets eaten so fast, we haven't froze any.

Catherine walked in the Payson, Utah Parade today, so in honor of Payson's "Onion Days", I made Onion Bombs, and our version of a Bloomin' Onion .... no Breading !

The 2 "wrapped" racks only took 1 hr to get to tender, then I let them run on the open grate again for another half hour, then sauced and let it tighten up a bit. So, about 6 1/2 hrs total, with one of those hours wrapped. The unwrapped rack is still going and hasn't gotten to the point its tender. Guessing it's gonna be 7+.

We've always had issues with (St Louis Style) Spares being done on any form of schedule


I think I hear that Brisket millin' around over there in its Cooler
Maybe it's up from its Nap
We'll have to check it out in a few 🤗
