what does bbq mean in your area?

I live in NM, so we kind of get a mix of everything. Most BBQ joints here serve either Texas or Memphis style Q.

As a native Texan, I am partial to Texas style, as such....Beef is king. I like pulled pork, but honestly, If I am doing something with pork, it's more likely to be Kahlua Pork, instead of pulled pork. Pork ribs I usually do Memphis style (dry).

No, I do not smoke with Mesquite. :) It's great for grilling steaks, chicken, etc, but I would never smoke a brisket with it. To me it's a grilling wood.

I'm in WA State, Western WA, I don't think there is a predominant style of BBQ here that I know of. Seems like every BBQ joint I have been to is different. You get a pretty good mix of everything here!
 
In Central Mississippi, we really don't have BBQ joints. Most are smoke houses, with sauce on the side. Ribs, brisket, pulled pork, chicken. It's been a long time since I had BBQ chicken off the grill.
 
I'm in Texas. In my area beef is king. Brisket slow smoke with mesquite is the ticket. Some of the guys use oak, and we have some outsiders that bring in hickory 😄, but for me, a big brisket needs a strong smoke.
 
San Diego has an incredible vacuum of good bbq. Something very close to Santa Maria style tri-tip is the norm. The joints that come and go are marginal (IMHO) at best.
Probably the best "bbq" comes from the mobile taco guys that people hire for company get togethers or family events/parties. Carne and pollo asada cooked over scrub oak and mesquite, chopped then crisped a bit on a griddle before bein put on a fresh made tortilla with onions, cilantro, guacamole and salsa (todo). the really good ones will have some fresh ceviche "hidden" for those in the know to grab or request.
 
California here seems to be the world melting pot of BBQ styles, flavors, and fusions. And yes, some of the "Taco Trucks" kick butt on the restaurants. Never get tired of sampling new things and trying to recreate it at home. The family enjoys the experiments too. Only thing I haven't seen around here is Carolina White Sauce on some protein. I'd like to try what it's "supposed" to taste like. It sounds good.

I’m not sure that white sauce is a big thing even in the Carolinas, as vinegar-mustard based sauces dominate there. There is a strong fan base for Alabama White Sauce, but i’m not one of them.
 
i actually have seen a white bbq sauce at a restaurant but i have never tried it. i will make it a point to try it next time i see it. our best bbq restaurants always look like a junky place, usually in an old gas station. and they always have pulled pork baked bean slaw and mac and cheese. most have chicken about half will have pork ribs. very few will have brisket.

Good catch. Alabama white sauce is what I was thinking. Watching too many cooking shows lately. Only good thing on TV right now.
