Well it has been a while since I posted any of my cooks.. tonight I tried PBBE for the first time. It was the main course but next time we both (wife & I) agreed to do over white rice (we are trying to watch carbs? hahaha yeah right).

High level details:
  • Costco Swift Pork Belly package was cut in 1/2 and saved for another cook
  • Sliced into strips then cubed
  • Placed into bowl and added RecTeq Comp Rub
  • G Hughes' Smokehouse sugar free sweet & spicy sauce was used following smoke
  • Wife made side salad (again, toward the end of the meal she said she is ready to hand over the reigns for those that know my story.. LOL)
Cook Details:
  • Ran at 225 on mesh mat for 3 hrs to smoke
  • Put in 2x tins with added butter, honey & above sauce covered for 1hr @ 250
  • Uncovered ran @ 275 for 15 min then 5 min bumped up to 400 to help thicken
  • Removed and plated

Overall I would have liked them little more burnt. Maybe next time I will run at 250 instead of 225 for initial. I did not remove any fat and next time will take a layer off. It was not bad but think this would improve the final results. No complaints and we both agreed to do this again. Still have another half to go.

Crazy, I was at Costco this week and saw that. they had some cut into strips as well. Cant wait to try. Did you turn them or just let them go?
Sauce sounds good as well, checking it out.

I just let them go while they were smoking and when in the tins covered. I stirred them a few times after I uncovered for that last 20 min. It was my first so learned a few things. Watched the video below and realized I should have cut some of that top skin/fat off. Will try a few things to tweak to try & get a little more "burnt" but not overdone. They are so worth it :) .. Very tasty.

Just the wife and I tonight (family day was yesterday) for a little Black Angus Ribeye reverse seared on Weber gasser following the Bull with onion rings.. Only shook a little Uncle Chris Gourmet Steak Seasoning on top.

Happy Tummies and kicking back in the chair/couch with the pups now settling :)

Pops.. I just LOL and my wife on the couch was like "what?" .. she chuckled since she understands the weirdness and loves the meals.
