This weekend we purchased some lamb chops from the Halal butcher. We marinated them in a mint sauce then put Rec-Teq Freakin Greek rub on them. Put Grill Grates in the 590 and kicked it up to 400 degrees. Did the chops at about 6 minutes per side and they came out wonderful! Pics attached, We did not bother to put cross grill marks on them but you can still see the grill marks left by the grill grates. Next week I am going to try goat. Since I never eat or cooked Goat does anyone have input on how to cook it
