What are we having for New Years dinner?

Left over pork shoulder smoked on the Bull and pulled from earlier this year, had some and then froze the rest, we will see if this gives us the results from other cooked and frozen or refrigerated things we have had with great success in the past, I'll let you know next year. :)

Being from Lancaster County PA there is only one answer to that question. Pork, sauerkraut and mashed potatoes! Pork butt goes on @ 12:01 tonight to be sure that 2020 is hindsight.

Yum!!

First time attempt at reverse sear filet mignon on 590. Purchased the grill grates with my 590 and will be using them for the first time. Hopefully I'll get a good sear on the steaks.

We’re doing this today. It’s swaddled in pink paper and back on the Bull. Decided to use an Inkbird probe alongside the Rec Teq probe just to see what I got. Right on the money!

We made our big New Year meal last night. Tonight will probably be leftovers. Last night cooked a 2" (3+ pound) porterhouse steak. Rubbed all sides with Oak Ridge Santa Maria Grill Seasoning. On the pit at 275 until internal hit 130. Seared the steak in a cast iron skillet using Ghee. Cut the meat off the bone and sliced, then put the meat back in their respective areas for presentation, ala a good steakhouse. Sides were mashed potatoes, homemade cranberry sauce and coconut creamed kale. Everything was awesome. I needed to let the steak rest just a little longer before slicing as I lost a bit of the juices.
