Bull Eye o round

It’s excellent for beef jerky. I have made 2 batches with eye of round and both were awesome. Might be my 2 older girls favorite thing I have smoked.
 
I've done one on the stampede, and while the flavor was good and the end product still juicey, getting it sliced thin enough to not be chewy was a huge PITA with my best knives. It's just such a lean cut of meat that other uses like jerky might be ideal.
 
If you cook it hot...say 375...just until you get to 120 internal with a crusty exterior, pull it, let it rest, throw it on a meat slicer and you'll have a great pit beef sandwich on a kaiser roll with some tiger sauce (horseradish, black pepper, lemon juice, and mayo)

Works good with big sirloin tips too.
