Mine is stubborn too, I discovered cream cheese is so sticky that she will take that and eat whatever I roll up in the ball of it. She's an old gal at 13 years now, so sometimes have to choke it down her throat. I hate doing, but sometimes need to resort to this.
Water will get inside, under especially in the storage cart area. I found water in the drawer where the drip pan goes too when I forgot to put my cover back on. You will have to season the cover as well. Recommend tent sealant.
I posted about the RecTec covers....they are not waterproof and my 1070 got really wet after a basic rain. Bought some tent repellant, sprayed the entire inside. Double sprayed the seams. Been dry under the cover ever since.
I see coordination as the issue, not funky flavors. I'd suggest do the brisket. When it's done (because stall knows no bounds....) that when you wrap and rest the brisket, should be plenty of time for spatchcocked Turkey.
I've used the smaller Jackery (300W) to try and run a sous vide machine. I did not specifically review the power draw from this, but the jackery could not run it. You really need to check the power used by the RecTec and limitations on the 500 to confirm you have plenty of room to run for...
Don't be me. Sure I spent the time to cover the drip pan with heavy duty foil. Watching cook after cook, said. Meh.... I don't feel like cleaning this time. Next time for sure....

After smoking a turkey a few years ago, my family no longer wants it any other way. I would highly recommend brine. I usually brine for 2-3 days with some herbs and lots of fruit. Never been dry.
I've found not wrapping always ends up drier. Maybe an unwrapped experiment with adding a water pan? Hit that sweet spot. After watching a YouTube video with Henry Soo, don't think I'll ever do 321 method again.
Update: Kiwi brand tent spray was added on the inside. Last night, overnight all night rain and it was dry this morning.
