Has anybody mounted a Smokai on their RT 590? My wife gave me one for Christmas and I'm wondering what woukd be the best option for mounting it. I'm thinking of mounting it on the rear of the smoker close to the hopper, but I'm open to suggestions.

I'm looking for a smoked fish dip recipe. I have some haddock on hand but I don't know if that would be a good choice for a dip. I have seen several recipes but they call for either smoked whitefish or adding liquid smoke. I would rather try smoking the fish myself.
About an hour ago I put a brisket in my 590 and all seems to be going well. I updated the app when I checked my phone but I cannot get a graph of the present cook. I can see graphs of past cooks but not the one I'm doing now.

I had a brisket on when I posted the question so I figured that I would give it a try. Both meat probes hit 203 at about the same time. The pit temp was 250. I turned the smoker off and monitored the temperatures. They did not go above 203 and actually started dropping after about five...
After reaching "probe tender" would it be okay to just turn off the smoker and leave the wrapped brisket in while it cools? Why wrap it in towels or blankets and put it in a cooler? It seems to me that leaving it in would accomplish just about the same thing.
I don't think the $84 Davy Crockett will fit the 590. I don't know about any other RT model. The one that fits the 590 is the GMG 4023 Daniel Boone - Jim Bowie model. That one goes for $159 on the same EBay site.

Thanks for posting this Rallypig. I just ordered the 30 x 18 x 1.5 from Amazon. Strange how the smaller size costs more. 18" seems a little deep and I may take off a few inches from that. I'll know better when I get it. Delivery is scheduled for the end of Feb so they must not have it in stock.
