    BFG Temp control issue

    I change the heat diffuser, I lowered the feed rate, use lumberjack pellet. First few cooks temperature went up too high, with some of the changes I did to it maintains temperature pretty much on line.

    Overnight smoked this brisket for about 15 hrs, wrapped and finished cooking for 2 more hrs. Very nice bark, pull and bend! Solid consistency!! Cook at 225 all the way through, went up to 250 last two hrs after wrapped.

    Did you try switching the thermometers sides and see if still the same? Maybe a malfunctioning on one of the thermometers?

    for reheating is great, for certain items is also great. I sous vide my ice cream mix in because it keeps perfect temperature!!
