    if this is a quiz, 1. heat from bottom to top 2. have know idea about brisket, have never cooked one but always trying to learn. Thanks

    Does ur smoker have more heat from the bottom or the top which means fat side up or down?

    I'm thinking fat side down so it can cook up through the meat and drip on the grill and sizzle up.
