Doing my first real smoke on the Bullseye, a 2.3LB chuck roast using a rub from a local BBQ joint that reminds me of south Texas.

How'd it turn out?
Hey Blues,. it turned out ok. I smoked a turkey Christmas Day and it was as good as if not better than when I fry turkeys . It was plenty flavorful but it was trending to the dry side. my first turkey was juicy . I am going to get a nice meat thermometer and not rely so much on the two probes. I suspect if I pulled it off the grill say 45 minutes sooner it would have been perfect ! Thanks for asking. I am going to try straight up turkey breasts soon .

Cooked some poor man's burnt ends on Saturday. Tried it a bit different this time by cubing up the meat first in order to get smoke on all sides of the meat. It worked out great! Cooked it on extreme smoke for 2.5hrs, panned it, put on some brown sugar, butter, honey and bbq sauce for another 2.5hrs then open it and slathered it with more bbq sauce for and hour uncovered. Sure didn't last long.
