Kitchen shears for spatchcock

I've heard about spatchcock turkeys and chickens now for a long while and think I want to give it a try. Though honestly I'm not sure how much better it can be over my current cajun smoked turkey ;)

That said I'm in the market for a really good set of kitchen shears. Looking around I've come across these Shun Kitchen Shears that looks pretty nice, at least in terms of the reviews.

What brand shears do you guys use?
 
Cutco, part of a set my wife brought to the marriage 21 years ago. They are great, the only thing from the Cutco set that I use. The Shun is well respected also, never used them myself but I expect they would be great.
 
A couple of years ago my hand was injured an my wife isn’t strong enough to spatchcock a turkey so...

Those look like great shears. Are you saying you didn't like them?
They have worked flawlessly for all other work, including spatchcocking chickens. I just didn't realize what greater level of force is required to do a turkey vs a chicken. I'm curious about others' feedback on using shears on a turkey.

I’m not a big fan of poultry sheers with a thumb hole. It’s so much easier when they have the flat handle on the top side where you can use the pad of your thumb to really get leverage. Like these:

Those do look comfy and a built-in bottle opener. :ROFLMAO:
 
I've been using Wusthof 5558's for about 20 years but just noticed they took the bone notch out of them so I can't recommend them. I see some of the ones others suggest do not have a notch, don't the bones slide away?
 
Well, I was reading this thread earlier in the week thinking my shears were somewhat old but worked good. They broke while spatchcocking the turkey :cry:

I bought these, hope they are good.
